Chef Karl builds flavors around a place and a story. Here are two of his collections, from the spice markets of the East to the Maine north woods.

Florals and exotics

The spice market in Istanbul inspires creativity as you walk between the stalls, the scent of rose petals mixing with fresh pistachios and cardamom. Chef Karl takes that inspiration to create East-meets-West flavors in gelato and ice cream: Pug Passion, Bergamot and Orange Blossom, and Ginger with Geranium among them.

Whether the inspiration comes from Turkey, Lebanon, Israel, Iran or India, these flavors remind us of the Maine sea captains who brought exotic spices home. Stop by the shop in Surry to see the latest flavors Chef Karl has dreamed up.

Delights the nose without being overwhelming, and is sure to please the most discerning palate. Made as both ice cream and gelato.

A bright, fresh ginger that has been a staple of Downeast parlors since the 19th century, re-invented as a gelato with geranium water for a subtle lift.

Northwoods

The Maine woods, in a cone

Imagine a late-summer morning in the Maine woods: a whiff of campfire on the fresh air, ferns and oak and spruce, a day of climbing, kayaking or walking ahead of you. The Northwoods collection is named for Mount Katahdin, the last mountain of the Appalachian Trail.

What better way to finish the day than a dish of Pugnuts at the shop in Surry. These are the flavors of the north woods.

Toasted culinary oak chips steeped in milk overnight, then made into gelato: an oaky flavor with a hint of woodsmoke at the finish.
